The present day rise in milk allergy and intolerance is due to the processing of heating (pasteurisation) and homogenisation of milk, which causes the fat particles which should sit on the top to become emulsified and not separate into cream. These fat particles become so small they are then able to penetrate the gut wall (leaky gut) into the bloodstream triggering an allergic response and allergy symptoms.
Milk allergy normally presents in infancy when cows milk is introduced when the digestive system is not adequately developed to digest milk proteins.

There are many possible reasons why an imbalance occurs which causes the body to become sensitive to milk. Emotional stress, medication, vaccination, changes in weather could all be exciting causes.
